COOKIES

This is not a cooking blog. It never will be. However, I must interrupt the adorable pictures of cute kids to post a recipe that I kind of invented. I got the basics of the recipe from about a dozen different recipes on the web, and then modified it for myself. After a few iterations, I have found a variation that I love.

1 cup natural nut butter (I use 1/2 cup natural almond butter and 1/2 cup natural peanut butter)
1/2 cup maple syrup
1 tsp baking powder
1 egg
1 tsp vanilla
1 cup "filler" (such as: 1/2 cup chocolate chips and 1/2 cup of shredded coconut; or1/3 cup chocolate chips, 1/3 cup coconut and 1/3 cup chopped peanuts. You can use any nuts, berries or candies as long as they equal 1 cup or slightly more).

Convection bake at 350F for 8 minutes
or
Bake at 375F for 8-10 minutes

They will come out looking a bit underdone, but this makes them chewy and soft. They're not very sweet and are packed with protein.

They will be this enjoyable (cute kid even makes it onto the recipe blog post).

I can't guarantee that you'll be this cute eating them, though.
